  • 1 cup (240ml) heavy cream
  • 1/2 cup (120ml) bourbon whiskey
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 sprig fresh thyme (optional)

Instructions

  1. Melt the unsalted butter in a skillet or saucepan over medium heat until it is a clear, golden liquid (about 2-3 minutes). Do not let it brown.
  2. Carefully pour in the bourbon whiskey. Remove pan from heat briefly if concerned about ignition, then return to medium heat. Simmer for 2 minutes to cook off the harsh alcohol taste.
  3. Pour in the heavy cream and whisk into the whiskey-butter mixture. Simmer gently for 3-4 minutes until the sauce reduces slightly and coats the back of a spoon.
  4. Stir in the Dijon mustard, Worcestershire sauce, and garlic powder. If using, add the fresh thyme sprig. Simmer for another minute to meld flavors.
  5. Taste the sauce and season with salt and black pepper as needed. If too thick, add a splash of cream; if too thin, simmer for another minute.
  6. Remove from heat and discard the thyme sprig if used. Serve immediately over hot steak.

Notes

Use a medium-proof bourbon like Buffalo Trace or Maker’s Mark for best results. Avoid smoky whiskies like Laphroaig as they can overpower the dish. Do not substitute heavy cream with milk or half-and-half, as the sauce will be thin and greasy. Keep heat at medium to prevent the sauce from breaking or curdling. Do not freeze this sauce as the cream will separate upon thawing.
