  • 4 bone-in, thick-cut pork chops (1 to 1.5 inches thick)
  • 2 tablespoons all-purpose flour (optional, for gluten-free skip)
  • 1 tablespoon olive or avocado oil
  • 4 tablespoons unsalted butter
  • 45 cloves garlic, minced
  • 1 cup chicken broth (low-sodium)
  • 1/2 cup heavy cream
  • 1/2 cup parmesan cheese, freshly grated
  • 1 teaspoon dried parsley
  • Kosher salt and black pepper, to taste

Instructions

  1. Pat pork chops dry with paper towels and season generously with salt and pepper. Lightly dust with flour if using, shaking off excess.
  2. Heat a cast iron or heavy-bottomed skillet over medium-high heat. Add oil and wait until it shimmers.
  3. Sear chops for 3-4 minutes per side until golden brown. Remove to a plate and set aside.
  4. Reduce heat to medium. Add butter to the pan. Once melted, add garlic and cook for 30 seconds until fragrant.
  5. Pour in chicken broth and scrape up brown bits from the bottom of the pan.
  6. Stir in heavy cream and parmesan cheese. Simmer for 2-3 minutes until sauce thickens.
  7. Return chops to the pan, spooning sauce over them. Heat through for 1-2 minutes.
  8. Remove from heat, sprinkle with parsley, and let rest for 5 minutes before serving.

Notes

Ensure chops are dry before searing for a better crust. Do not crowd the pan. Cook to an internal temperature of 145°F. Let meat rest for 5 minutes to redistribute juices. For dairy-free, use olive oil and dairy-free parmesan.
