A quick and elegant weeknight dinner featuring thick-cut pork chops seared to perfection and finished in a rich, creamy garlic parmesan sauce. Ready in under 15 minutes.

- 4 bone-in, thick-cut pork chops (1 to 1.5 inches thick)
- 2 tablespoons all-purpose flour (optional, for gluten-free skip)
- 1 tablespoon olive or avocado oil
- 4 tablespoons unsalted butter
- 4–5 cloves garlic, minced
- 1 cup chicken broth (low-sodium)
- 1/2 cup heavy cream
- 1/2 cup parmesan cheese, freshly grated
- 1 teaspoon dried parsley
- Kosher salt and black pepper, to taste
Instructions
- Pat pork chops dry with paper towels and season generously with salt and pepper. Lightly dust with flour if using, shaking off excess.
- Heat a cast iron or heavy-bottomed skillet over medium-high heat. Add oil and wait until it shimmers.
- Sear chops for 3-4 minutes per side until golden brown. Remove to a plate and set aside.
- Reduce heat to medium. Add butter to the pan. Once melted, add garlic and cook for 30 seconds until fragrant.
- Pour in chicken broth and scrape up brown bits from the bottom of the pan.
- Stir in heavy cream and parmesan cheese. Simmer for 2-3 minutes until sauce thickens.
- Return chops to the pan, spooning sauce over them. Heat through for 1-2 minutes.
- Remove from heat, sprinkle with parsley, and let rest for 5 minutes before serving.
Notes
Ensure chops are dry before searing for a better crust. Do not crowd the pan. Cook to an internal temperature of 145°F. Let meat rest for 5 minutes to redistribute juices. For dairy-free, use olive oil and dairy-free parmesan.
