A quick and impressive weeknight dinner featuring salmon fillets glazed with a sweet-tangy strawberry, honey, and soy sauce mixture. Ready in under 20 minutes, this dish balances savory and sweet flavors for a healthy, restaurant-quality meal.
Ingredients
- 4 salmon fillets (about 6 oz each)
- 1 cup fresh strawberries, hulled and chopped
- 2 tablespoons honey
- 1 tablespoon soy sauce (or tamari for gluten-free)
- 2 cloves garlic, minced
- 1 teaspoon ginger, freshly grated
- 1/4 teaspoon red pepper flakes
- 1 tablespoon olive oil
- 2 stalks green onions, sliced
- 1 teaspoon lemon juice
- Salt and pepper to taste
Instructions
- Pat salmon fillets dry with paper towels and season both sides lightly with salt and pepper.
- In a small bowl, whisk together honey, soy sauce, minced garlic, grated ginger, and red pepper flakes to create the glaze.
- Heat olive oil in a skillet over medium-high heat.
- Add salmon fillets to the skillet and cook for 3-4 minutes on the first side without moving them to develop a crust.
- Flip the fillets carefully.
- Immediately pour the strawberry and sauce mixture over the salmon.
- Reduce heat to medium-low and spoon the sauce over the fish repeatedly (basting) as it bubbles and thickens.
- Cook for another 3-4 minutes until the salmon flakes easily with a fork and reaches an internal temperature of 145°F.
- If the sauce is too thick, add a splash of water or lemon juice; if too thin, let it reduce further.
- Remove salmon from the pan to serving plates.
- Spoon the remaining strawberry glaze generously over the top.
- Garnish with sliced green onions and a squeeze of fresh lemon juice. Serve immediately.
Notes
For best results, use room temperature salmon to ensure even cooking. If using frozen strawberries, thaw and drain excess liquid thoroughly. To prevent burning, keep heat at medium-low once the glaze is added. Can be adapted for oven baking at 400°F for 12-15 minutes, adding glaze in the last 5 minutes.
