Description

A quick, one-pan weeknight dinner featuring tender chicken and noodles coated in a sweet and savory garlic sauce. This recipe skips the separate sauce mixing step for faster prep and uses noodle starch to naturally thicken the glaze.


Ingredients

  • 1.5 lbs chicken breast, cut into bite-sized pieces
  • 4–5 cloves garlic, minced
  • 1/3 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 8 oz noodles (ramen, spaghetti, or udon)
  • 1 tablespoon cornstarch
  • 2–3 stalks green onions, sliced
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1 tablespoon cooking oil

Instructions

  1. Cut chicken breasts into bite-sized pieces and season lightly with salt and pepper.
  2. In a small bowl, whisk together soy sauce, brown sugar, rice vinegar, sesame oil, and cornstarch until smooth.
  3. Heat a large skillet over medium-high heat with cooking oil. Add chicken in a single layer and sear for 2-3 minutes without moving, then flip and cook for another 2-3 minutes until golden brown.
  4. Push chicken to the sides of the pan and add minced garlic to the center. Cook for 30-60 seconds until fragrant, then stir together.
  5. Pour the sauce mixture over the chicken and garlic. Stir to coat.
  6. Add noodles and 1/2 cup of water to the pan. Cover with a lid.
  7. Cook for 4-5 minutes, stirring occasionally, until noodles are tender and sauce is glossy and thickened.
  8. Remove from heat. Taste and adjust seasoning if needed. Garnish with green onions and red pepper flakes. Serve immediately.

Notes

Do not overcrowd the pan to ensure the chicken sears properly. If the sauce gets too thick, add a splash of water. For a gluten-free version, use tamari and gluten-free noodles. If using udon noodles, add them in the last 2 minutes to prevent mushiness.
