  • 2 tablespoons cornstarch
  • 1 tablespoon vegetable oil
  • 1/3 cup low-sodium soy sauce
  • 3 tablespoons brown sugar
  • 2 tablespoons rice vinegar
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/4 cup chicken broth
  • 1 teaspoon sesame oil
  • Green onions, sliced (for garnish)
  • Toasted sesame seeds (for garnish)
  • Steamed rice (for serving)

Instructions

  1. Pat chicken pieces dry and toss with 2 tablespoons of cornstarch until lightly coated.
  2. In a small bowl, whisk together soy sauce, brown sugar, rice vinegar, garlic, ginger, chicken broth, and sesame oil until sugar is dissolved.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat. Cook chicken in batches for 2-3 minutes per side until golden brown and cooked through. Remove and set aside.
  4. Reduce heat to medium. Pour sauce mixture into the same skillet and stir constantly for 1-2 minutes until it thickens and becomes glossy.
  5. Return chicken to the skillet and toss to coat evenly in the sticky glaze.
  6. Serve immediately over steamed rice, garnished with green onions and sesame seeds.

Notes

Do not overcrowd the pan when cooking chicken to ensure it sears rather than steams. If the sauce becomes too thick, add a splash of water. For a gluten-free version, substitute soy sauce with tamari. The flavors improve the next day, making it great for meal prep.
