Spicy Mayo Baked Salmon: Easy Date Night Dinner

  • Author: ava_chapman
  • Total Time: 25 minutes
  • Yield: 4 servings 1x

Description

A foolproof, creamy, and spicy baked salmon recipe that feels like a restaurant dinner but requires minimal effort. Perfect for date nights or busy weeknights, this dish features a rich sriracha-mayo glaze that keeps the fish moist and flavorful.

Ingredients

Scale
  • Salmon fillets (about 6 ounces per person, wild-caught preferred)
  • 1 tablespoon neutral oil (olive or avocado oil)
  • Salt and freshly cracked black pepper
  • 1/3 cup full-fat mayonnaise (Kewpie or standard)
  • 12 tablespoons sriracha sauce (adjust to taste)
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon sesame oil
  • 1/2 teaspoon garlic powder
  • Green onions, sliced (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pat the salmon fillets dry with paper towels and place them skin-side down on a parchment-lined baking sheet.
  3. Season both sides of the salmon lightly with salt and pepper.
  4. In a small bowl, whisk together mayonnaise, sriracha, soy sauce, rice vinegar, sesame oil, and garlic powder until smooth. Taste and adjust seasoning if needed.
  5. Spoon the spicy mayo mixture over the salmon fillets, spreading it evenly to cover the top and sides.
  6. Bake for 12-15 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
  7. Optional: Broil for the last 1-2 minutes to char the top slightly, watching closely to prevent burning.
  8. Remove from oven, garnish with sliced green onions, and serve immediately.

Notes

Do not overcook the salmon; it should remain slightly glossy in the center. If fillets are very thick (>1.5 inches), reduce oven temp to 375°F and bake for 15-18 minutes. Ensure salmon is patted dry before seasoning to prevent steaming. For a mild version, reduce sriracha to 1 teaspoon.
