Ingredients
- 1.5 lbs fresh salmon fillets, skin removed and cut into 1-inch cubes
- 1 large egg, beaten
- 1 cup panko breadcrumbs

- 1/2 cup mayonnaise

Instructions
- Pat salmon fillets dry with paper towels and cut into 1-inch cubes.
- In a shallow dish, combine panko breadcrumbs, cornstarch, garlic powder, and paprika.
- In a separate shallow bowl, beat the egg until smooth.
- Dip each salmon cube into the egg wash, then roll in the panko mixture, pressing gently to coat. Place on a wire rack.
- In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, lime juice, and honey. Set aside.
- Heat olive oil in a large non-stick skillet over medium-high heat.
- Add salmon bites in a single layer (cook in batches if necessary) and fry for 2-3 minutes per side until golden brown and crispy.
- Remove salmon from pan and place on a serving platter.
- Drizzle the Bang Bang sauce generously over the top.
- Garnish with green onions and sesame seeds if desired. Serve immediately.

Ensure salmon is patted very dry before coating to ensure crispiness. Do not overcrowd the pan to prevent steaming. For a gluten-free option, swap panko for crushed gluten-free crackers or almond flour. For a dairy-free option, use dairy-free mayo.
