Instructions

  3. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  4. In a separate medium bowl, whisk together the flour, baking soda, cream of tartar, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed just until the flour disappears. Do not overmix.
  6. In a small bowl, mix the ½ cup of sugar with the cinnamon for the coating.
  7. Roll portions of dough (about 1 tablespoon) into balls and roll them in the cinnamon-sugar mixture until fully coated.
  8. Place dough balls on the prepared baking sheets, leaving about 2 inches of space between them.
  9. Bake for 8-10 minutes until edges are set and lightly golden, but centers still look soft.
  10. Let cookies sit on the hot pan for 5 minutes to set, then transfer to a wire rack to cool completely.
