Description

These chewy, gooey s’mores cookies capture the nostalgic flavor of campfire treats without the hassle. With crispy edges, a soft center, and pockets of melted chocolate and toasted marshmallow, they are a quick and easy dessert perfect for busy weeknights.


Ingredients

  • 1 cup (2 sticks) unsalted butter, softened to room temperature
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • ½ cup milk chocolate chips
  • 1 ½ cups mini marshmallows

Instructions

  1. Preheat oven to 350°F (175°C). Line two large baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter, granulated sugar, and brown sugar together on medium speed for 2-3 minutes until pale and fluffy.
  3. Add the eggs and vanilla extract. Mix on medium-low speed until just combined.
  4. In a separate medium bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until the flour disappears. Do not overmix.
  6. Fold in the chocolate chips and mini marshmallows using a spatula or mixer on lowest setting. Reserve a small handful of marshmallows for topping.
  7. Scoop dough into 1.5-inch balls and place on prepared baking sheets, spacing them 2 inches apart.
  8. Press a few extra mini marshmallows into the top of each dough ball.
  9. Bake for 10-12 minutes until edges are golden brown but centers still look slightly soft.
  10. Let cookies sit on the hot pan for 5 minutes to set, then transfer to a wire rack to cool completely.

Notes

Butter should be soft but not melted. Mini marshmallows are preferred for even distribution. Cookies continue to cook on the hot pan after removal from the oven, so remove them when centers look slightly underdone for a gooey texture. Store with a slice of bread to maintain softness.
