Description

Ingredients

  • 23 lbs boneless, skinless chicken thighs (cut into bite-sized pieces)
  • 1/2 cup soy sauce (low-sodium recommended)
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/2 teaspoon black pepper
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)
  • 1 tablespoon toasted sesame seeds (for garnish)
  • 2 green onions, sliced (for garnish)
  • Steamed rice (Jasmine or short-grain) for serving
  • Steamed vegetables (broccoli, snap peas, or carrots) for serving

Instructions

  1. Pat chicken thighs dry and cut into large, bite-sized pieces. Place them in the slow cooker pot in an even layer.
  2. In a medium bowl, whisk together soy sauce, honey, rice vinegar, minced garlic, grated ginger, and black pepper until the honey is dissolved.
  3. Pour the sauce mixture over the chicken in the slow cooker, scraping the bowl to get all the flavor.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until chicken is tender and reaches an internal temperature of 165°F.
  5. About 30 minutes before serving, stir the cornstarch slurry into the slow cooker. Cover and cook on high for the final 30 minutes to thicken the sauce.
  6. Serve the chicken and sauce over steamed rice, topped with toasted sesame seeds and sliced green onions. Add steamed vegetables on the side.
