Description

  • 1.5 to 2 pounds boneless, skinless chicken breasts
  • 1 can (15 oz) whole kernel corn, drained (or 1 cup fresh/frozen corn)
  • 8 oz block full-fat cream cheese, cut into cubes
  • 1/2 cup full-fat sour cream
  • 1 chipotle pepper in adobo sauce, finely minced
  • 12 tablespoons adobo sauce
  • 1/2 cup low-sodium chicken broth
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon chili powder
  • Salt and black pepper to taste
  • 1/2 cup crumbled feta cheese
  • Juice of 1 fresh lime
  • Fresh chopped cilantro for garnish

Instructions

  1. Pat chicken breasts dry and cut into 1.5-inch chunks. Place in the bottom of a 4- to 6-quart slow cooker.
  2. Add the corn to the slow cooker.
  3. In a small bowl, combine smoked paprika, cumin, garlic powder, onion powder, chili powder, salt, and pepper. Sprinkle evenly over the chicken and corn, tossing to coat.
  4. In a separate bowl, whisk together chicken broth, minced chipotle pepper, adobo sauce, and cubed cream cheese until smooth.
  5. Pour the wet mixture over the chicken and corn in the slow cooker.
  6. Cover and cook on low for 4 hours, or until chicken is tender.
  7. Stir gently to melt the cream cheese. If lumps remain, cook on high for an additional 30-45 minutes until smooth.
  8. Sprinkle feta cheese over the top and stir in fresh lime juice. Cover and let sit for 10 minutes to meld flavors.
  9. Garnish with fresh cilantro and serve immediately.

Notes

Use block cream cheese, not spreadable, for a thicker sauce. Do not open the lid during the initial cooking phase. If using frozen corn, do not thaw. For a thinner sauce, add more broth; for thicker, cook uncovered on high for the last 30 minutes. Chicken thighs can be substituted but may require slightly longer cooking time.
