- 2 to 3 pounds boneless, skinless chicken thighs or breasts
- 1/2 cup honey
- 1/2 cup Dijon mustard
- 2 tablespoons soy sauce (low-sodium recommended)
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
Instructions
- Rinse chicken under cold water and pat dry. Place chicken pieces in the bottom of a 6-quart slow cooker in a single layer.
- In a medium bowl, whisk together honey, Dijon mustard, soy sauce, garlic powder, dried thyme, and black pepper until smooth.
- Pour the sauce evenly over the chicken, using a spoon to ensure every piece is coated.
- Cover and cook on Low for 6 to 7 hours, or on High for 3 to 4 hours.
- Check that the internal temperature of the chicken reaches 165°F (74°C).
- Optional: For thicker sauce, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir into the slow cooker during the last 30 minutes of cooking.
- Serve chicken with the sauce spooned over the top.
Notes
Do not use frozen chicken; ensure it is completely thawed. Pat chicken dry before cooking to help sauce adhere. If using chicken breasts, check for doneness earlier to prevent drying out. Leftovers keep in the fridge for up to 4 days or can be frozen for up to 3 months.
