  • 1 medium yellow onion, finely diced
  • 34 garlic cloves, minced
  • 1 tbsp Worcestershire sauce
  • 1 cup beef broth (low-sodium)
  • 1.5 lbs red potatoes, cut into 1/2-inch cubes
  • 1 can (10.5 oz) cream of mushroom soup
  • 2 cups sharp cheddar cheese, shredded
  • 1 tsp black pepper
  • Optional: 1 cup frozen corn, green beans, or diced bell peppers

Instructions

  1. Heat a large skillet over medium-high heat. Add ground beef and break apart with a wooden spoon. Cook until no pink remains, then drain excess fat.
  2. In the same skillet, add diced onion and minced garlic. Sauté for about 2 minutes until translucent and fragrant. Stir in Worcestershire sauce and black pepper, then remove from heat.
  3. Wash and cube red potatoes into 1/2-inch pieces.
  4. Transfer the browned beef mixture and sautéed onions to a 4- to 6-quart slow cooker. Add the cubed potatoes.
  5. Pour in the beef broth and cream of mushroom soup. Stir everything together until potatoes are well-coated.
  6. Cover and cook on low for 4 to 5 hours, or on high for 2 to 3 hours, until potatoes are tender.
  7. About 30 minutes before serving, sprinkle shredded cheddar cheese over the top. Cover and let sit until cheese is melted and bubbly.
  8. Gently stir to mix cheese into the casserole. Serve hot, optionally garnished with parsley or green onions.

Notes

Browning the beef is crucial for flavor and texture. Ensure potatoes are cut uniformly for even cooking. Add cheese in the last 30 minutes to prevent breaking. Leftovers keep well in the fridge for 4 days or can be frozen for up to 3 months.
