Description

Ingredients

  • 1.5 pounds jumbo shrimp, peeled and deveined
  • 1 pound smoked andouille sausage, sliced into half-moons
  • 2 large bell peppers (red and green), chopped into 1-inch chunks
  • 1 medium red onion, sliced into wedges
  • 4 cloves garlic, minced
  • 2 tablespoons Cajun or Creole seasoning blend
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup fresh parsley, chopped
  • 1 lemon, cut into wedges for serving

Instructions

  1. Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or grease with olive oil.
  2. In a large mixing bowl, combine the sliced andouille sausage, chopped bell peppers, and red onion.
  3. In a small bowl, whisk together the melted butter, olive oil, minced garlic, and Cajun seasoning to create a smooth paste.
  4. Pour the seasoning mixture over the sausage and vegetables. Toss thoroughly to coat evenly.
  5. Spread the sausage and vegetable mixture onto the prepared baking sheet in a single layer. Roast for 10 minutes.
  6. Remove the pan from the oven. Add the raw shrimp to the pan and toss gently with the other ingredients.
  7. Return the pan to the oven and roast for another 5-7 minutes, until shrimp are opaque, pink, and form a loose ‘C’ shape.
  8. Remove from oven, sprinkle with fresh parsley, and squeeze lemon juice over the top. Serve immediately.

Notes

Do not overcrowd the pan; ingredients should be in a single layer to ensure roasting rather than steaming. Pat shrimp dry before adding to prevent steaming. Shrimp cook quickly, so add them halfway through to avoid overcooking. If using frozen shrimp, ensure they are fully thawed and patted very dry.
