Description
A quick and elegant weeknight dinner featuring seared pork chops coated in a sweet and tangy raspberry-balsamic glaze. This recipe balances savory meat with bright fruit flavors for a crowd-pleasing meal.
Ingredients
Scale
- 4 bone-in, center-cut pork chops (1 to 1.5 inches thick)
- 1 cup fresh or frozen raspberries
- 1/2 cup aged balsamic vinegar
- 1/4 cup packed brown sugar
- 2 cloves garlic, minced
- 2 tablespoons unsalted butter
- 1/4 cup low-sodium chicken broth
- 1 tablespoon olive oil
- Kosher salt and freshly cracked black pepper
Instructions
- Pat pork chops dry with paper towels and season generously with salt and pepper. Let them sit at room temperature for 15 minutes.
- Heat a large skillet (preferably cast-iron) over medium-high heat. Add olive oil and let it shimmer.
- Sear pork chops for 3-4 minutes per side until a golden crust forms. Remove chops from pan and set aside, leaving juices in the pan.
- Reduce heat to medium. Add minced garlic and cook for 30 seconds until fragrant.
- Pour in chicken broth to deglaze the pan, scraping up brown bits from the bottom.
- Stir in brown sugar and balsamic vinegar. Bring to a gentle simmer.
- Add raspberries and gently crush some with a wooden spoon to release juices.
- Simmer the glaze for 5-7 minutes until it thickens slightly and coats the back of a spoon.
- Remove pan from heat and stir in butter until melted and incorporated.
- Return pork chops to the pan, spooning glaze over the top. Let sit for 1 minute to absorb flavors.
- Serve immediately, garnished with fresh herbs if desired.
Notes
Ensure pork reaches an internal temperature of 145°F (63°C) for safety and juiciness. Do not overcrowd the pan when searing to ensure a good crust. If using frozen raspberries, you may need to simmer the sauce slightly longer to thicken. For a dairy-free option, substitute butter with olive oil or coconut oil.
