Description
A quick, healthy, and flavorful weeknight dinner featuring ground turkey and sweet potatoes cooked in a single skillet with savory spices and fresh lime.
Ingredients
Scale
- 1 lb ground turkey (93% lean)
- 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
- 1 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 1 large red bell pepper, diced
- 2 tbsp extra virgin olive oil
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp chili powder
- 2 tbsp low-sodium soy sauce
- 1/4 cup low-sodium chicken broth
- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges
- Salt and black pepper to taste
Instructions
- Wash and peel sweet potatoes, then dice into small 1/2-inch cubes. Dice the onion and bell pepper, and mince the garlic.
- Heat olive oil in a large 12-inch non-stick skillet over medium-high heat.
- Add diced onion and bell pepper; sauté for about 3 minutes until onion is translucent.
- Add minced garlic and cook for 30 seconds until fragrant, being careful not to burn.
- Add diced sweet potatoes to the skillet; stir and cook undisturbed for 2 minutes to char, then stir and cook for another 3 minutes until edges soften.
- Push veggies to the side and add ground turkey to the center. Break up meat with a spatula.
- Season turkey with salt, pepper, cumin, smoked paprika, and chili powder. Cook for 4 minutes until no longer pink.
- Stir veggies back in with the turkey.
- Pour in soy sauce and chicken broth, scraping up browned bits from the bottom of the pan.
- Reduce heat to medium-low and simmer for 3 minutes until sweet potatoes are tender.
- Remove from heat, stir in fresh cilantro, and squeeze lime juice over the top.
- Taste and adjust seasoning, then serve immediately.
Notes
Ensure sweet potatoes are diced small (1/2-inch) to cook evenly with the turkey. Do not stir the turkey immediately after adding to the pan; let it sear for a minute to develop flavor. If sweet potatoes are still firm after simmering, add a tablespoon of broth and cover for 2 minutes. This recipe stores well in the refrigerator for up to 4 days.
