  • 3 cloves fresh garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup low-sodium chicken broth
  • 1 cup shredded cheddar or Mexican blend cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Wash and dice the potatoes, onion, and bell peppers into 1/2-inch cubes. Mince the garlic. Prep takes about 5-7 minutes.
  2. Place a large 12-inch skillet over medium-high heat. Add olive oil and heat until shimmering (1-2 minutes).
  3. Add diced potatoes to the skillet in an even layer. Cook undisturbed for 3-4 minutes to develop a crust, then stir occasionally and cook for another 5-7 minutes until tender. Add a splash of broth if dry. Total time: 10-12 minutes.
  4. Push potatoes to the side. Add onion and bell peppers to the cleared space. Cook for 2-3 minutes until softened. Add garlic and cook for 30 seconds until fragrant.
  5. Add ground turkey to the skillet, breaking it into small crumbles. Cook for 5-6 minutes, stirring frequently, until browned and cooked through. Drain excess liquid if necessary.
  6. Sprinkle paprika, garlic powder, salt, and black pepper over the mixture. Stir to combine and cook for 1-2 minutes to bloom spices.
  7. Reduce heat to low. Sprinkle shredded cheese evenly over the top. Cover with a lid and let sit for 2-3 minutes until cheese is melted and bubbly.
  8. Remove from heat. Garnish with fresh parsley and serve immediately.
