One-Pan Meatloaf & Mashed Potatoes: 30 Min Fast Heat Big Flavor

  • Author: ava_chapman
  • Total Time: 30 minutes
  • Yield: 4 servings 1x

Description

A quick and easy one-pan dinner featuring juicy meatloaf and creamy mashed potatoes, ready in under 30 minutes with minimal cleanup.

Ingredients

Scale
  • 1 lb (450g) Ground Beef (80/20 blend)
  • 1.5 lbs (680g) Small Yukon Gold Potatoes, peeled and diced into 1/2-inch cubes
  • 4 tablespoons (56g) Butter, divided
  • 1/2 cup (120ml) Milk, warmed
  • 1 large Egg, room temperature
  • 1/4 cup (25g) Plain dried breadcrumbs or panko
  • 1 small Yellow Onion, finely diced
  • 2 cloves Garlic, minced
  • 1 teaspoon Worcestershire Sauce
  • 3 tablespoons Ketchup
  • 1 teaspoon Brown Sugar
  • Salt and Pepper, to taste
  • 1 teaspoon Dried Parsley, divided

Instructions

  1. Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper or foil.
  2. Place diced potatoes in a microwave-safe bowl with 2 tablespoons butter, salt, pepper, and warm milk. Cover loosely and microwave on high for 8-10 minutes until tender, stirring halfway through.
  3. In a medium bowl, combine ground beef, egg, breadcrumbs, diced onion, garlic, Worcestershire sauce, and half the parsley. Mix gently and form into a loaf shape (8×4 inches) on the prepared baking sheet.
  4. In a small cup, mix ketchup, brown sugar, remaining parsley, and remaining 2 tablespoons melted butter. Brush glaze over the meatloaf.
  5. Push potatoes to one side of the baking sheet (or place in a bowl on the sheet).
  6. Bake for 15-18 minutes until meatloaf reaches an internal temperature of 160°F (71°C) and potatoes are tender.
  7. Let meatloaf rest for 5 minutes before slicing. Mash potatoes if needed and serve.

Notes

Use 80/20 ground beef for moisture. Do not overmix the meat to avoid a dense texture. Pre-cooking potatoes in the microwave ensures they are fluffy by the time the meat is done. Watch the glaze closely as sugar burns quickly; tent with foil if browning too fast.
