Description

Ingredients

  • Boneless, skin-on chicken thighs
  • Long grain rice (Jasmine or Basmati)
  • Low-sodium chicken broth
  • Yellow onion, diced
  • Fresh garlic, minced
  • Unsalted butter
  • Olive oil
  • Paprika
  • Garlic powder
  • Onion powder
  • Salt
  • Black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Pat chicken thighs dry with paper towels and season both sides generously with salt, pepper, paprika, garlic powder, and onion powder.
  2. Heat olive oil in a large heavy-bottomed skillet over medium-high heat until shimmering.
  3. Sear chicken thighs skin-side down for 4-5 minutes until golden brown, then flip and cook for another 3-4 minutes. Remove chicken and set aside.
  4. Reduce heat to medium. Add butter and diced onions to the same pan; cook for 3 minutes until soft.
  5. Add minced garlic and cook for 30 seconds until fragrant.
  6. Add dry rice to the pan and stir constantly for 2 minutes until slightly translucent and nutty.
  7. Pour in chicken broth, scraping the bottom of the pan to release flavorful bits. Bring to a boil.
  8. Nestle chicken thighs back into the rice mixture. Reduce heat to low, cover with a tight-fitting lid, and simmer for 15-18 minutes without lifting the lid.
  9. Remove from heat and let sit covered for 5 minutes.
  10. Fluff rice with a fork, garnish with fresh parsley, and serve.

Notes

Ensure chicken is dry before searing for a crispy skin. Do not lift the lid during simmering to prevent mushy rice. Use long-grain rice like Jasmine or Basmati; avoid short-grain or Arborio rice. For a dairy-free version, substitute butter with olive oil. Leftovers can be stored in the refrigerator for up to 4 days or frozen for 3 months.
