  • 2 tbsp butter
  • 1 medium yellow onion, diced finely
  • 3 cloves garlic, minced
  • 8 oz dry egg noodles (wide)
  • 1 ½ cups beef broth (low-sodium)
  • 1 tsp paprika
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • ½ cup sour cream (full-fat)
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat a large skillet over medium-high heat. Add butter and melt. Add ground beef, breaking it into small crumbles. Season with salt and pepper. Cook until no pink remains (5-6 minutes). Drain excess grease if desired, but leave some for flavor.
  2. Push beef to the sides and add diced onion. Cook until soft and translucent (2 minutes). Add minced garlic and cook for 30 seconds until fragrant.
  3. Sprinkle in paprika, Dijon mustard, and Worcestershire sauce. Stir to coat. Pour in beef broth, scraping the bottom of the pan to lift browned bits.
  4. Add dry egg noodles to the skillet. Stir to submerge in liquid. Bring to a boil, then reduce heat to medium-low. Simmer uncovered for 10-12 minutes, stirring every 2-3 minutes to prevent sticking.
  5. Check noodles for doneness (al dente). If too thick, add a splash of milk or broth. If too thin, cook longer.
  6. Remove pan from heat. In a small bowl, whisk sour cream with a tablespoon of hot sauce to temper it. Pour back into skillet and stir gently until combined.
  7. Taste and adjust seasoning. Garnish with fresh parsley and serve immediately.

Notes

Remove pan from heat before adding sour cream to prevent curdling. Temper the sour cream by mixing it with a little hot sauce first. Noodles will continue to absorb liquid after cooking, so serve immediately or add liquid when reheating. For a lighter option, substitute ground turkey and Greek yogurt.
