Ingredients

  • Boneless, skinless chicken thighs or breasts, cut into 1-inch cubes
  • Red onion, sliced into thin half-moons
  • Bell peppers (red and yellow), sliced into strips
  • Zucchini, sliced into half-moons
  • Fresh garlic, minced (4-5 cloves)
  • Extra virgin olive oil (2 tablespoons)
  • Dried Italian seasoning (oregano, basil, thyme, rosemary)
  • Kosher salt
  • Freshly cracked black pepper
  • Lemon, cut into wedges for serving

Instructions

  1. Preheat your heat source: Oven to 400°F (200°C), or prepare a campfire/grill for medium heat.
  2. Wash and dry all vegetables. Cut chicken into 1-inch cubes and slice onions, peppers, and zucchini into uniform pieces.
  3. Place chicken and vegetables in a large mixing bowl.
  4. Drizzle with olive oil and sprinkle with Italian seasoning, salt, and pepper. Toss until evenly coated.
  5. Tear off large sheets of heavy-duty foil (approx. 12×18 inches).
  6. Place a portion of the mixture in the center of each foil sheet.
  7. Fold the long sides together and seal tightly, then fold the short ends inward to create a sealed pouch. Double-fold edges if necessary to prevent leaks.
  8. Place packets on the grill grate, campfire grate, or baking sheet.
  9. Cook for 15-20 minutes, flipping halfway through, until chicken reaches an internal temperature of 165°F (74°C) and vegetables are tender.
  10. Remove from heat and let rest for 2-3 minutes before opening carefully to avoid steam burns.
  11. Squeeze fresh lemon juice over the contents before serving.
