Instructions

  1. Prep the vegetables by peeling and cubing the potatoes into half-inch pieces, dicing the onions finely, and mincing the garlic.
  2. Heat butter in a large cast iron or deep skillet over medium-high heat. Add ground beef and break it up with a wooden spoon, cooking until browned and no pink remains. Drain excessive grease, leaving about a tablespoon.
  3. Add diced onions to the beef and sauté until translucent and soft. Add minced garlic and cook for 30 seconds until fragrant.
  4. Stir in tomato paste, dried thyme, paprika, salt, and pepper. Cook for about one minute to toast the spices.
