These juicy Thai turkey burgers are a quick, flavorful weeknight dinner solution. Packed with ginger, garlic, lime, and soy, they offer big Asian-inspired flavor while remaining lean and moist.

- 1.5 lbs ground turkey (93% lean preferred)
- 1 tbsp fresh ginger, minced
- 2 cloves garlic, minced
- 2 tbsp soy sauce (or tamari for gluten-free)
- 1 tsp fish sauce
- 1 tbsp lime juice, freshly squeezed
- 1 tsp lime zest
- 2 stalks green onions, finely chopped
- 2 tbsp fresh cilantro, chopped
- 1/2 tsp red chili flakes (optional)
- 2 tbsp neutral oil (avocado or vegetable oil)
Instructions
- Zest the lime, then cut and juice it. Mince the garlic and ginger. Finely chop the green onions and cilantro.
- In a large mixing bowl, combine the ground turkey, soy sauce, fish sauce, lime juice, lime zest, garlic, ginger, green onions, cilantro, and red chili flakes.
- Gently mix the ingredients by hand or with a fork until just combined. Do not overmix to avoid tough burgers.
- Divide the mixture into four equal portions. Roll into balls and gently flatten into patties. Make a slight indentation in the center of each patty with your thumb.
- Heat a cast iron skillet or non-stick pan over medium-high heat. Add the neutral oil and wait until it shimmers.
- Place patties in the hot pan, ensuring they are not crowded. Cook undisturbed for about 4 minutes until a golden-brown crust forms.
- Flip the patties and cook for another 3-4 minutes. The internal temperature should reach 165°F (74°C). Avoid pressing down on the burgers.
- Remove burgers from the pan and let them rest for 2 minutes to allow juices to redistribute.
- Toast buns in the same pan if desired, then assemble and serve immediately.
Notes
Keep the ground turkey cold until cooking to help the patties hold their shape. Do not overmix the meat. Let the burgers rest for 2 minutes after cooking to retain moisture. For a gluten-free version, substitute soy sauce with tamari.
