  • 1 teaspoon fresh ginger, grated
  • Pinch of red pepper flakes
  • 1 tablespoon cooking oil (avocado or light olive oil)
  • Salt and black pepper to taste
  • Green onions, chopped (for garnish)
  • Toasted sesame seeds (for garnish)

Instructions

  1. Pat chicken breasts dry with paper towels and season both sides with salt and pepper. If thick, pound to an even 1/2-inch thickness.
  2. In a small bowl, whisk together honey, lime juice, soy sauce, minced garlic, grated ginger, and red pepper flakes until smooth.
  3. Heat oil in a large skillet or cast iron pan over medium-high heat. Add chicken and sear for 5-6 minutes per side until golden brown.
  4. Pour the glaze into the pan around the chicken. Reduce heat to medium-low and let the sauce bubble and thicken for 2-3 minutes, spooning it over the chicken frequently.
  5. Continue cooking for another 2-3 minutes, flipping once, until the internal temperature reaches 165°F (74°C).
  6. Transfer chicken to a plate and let rest for 5 minutes. Spoon remaining sauce over the top and garnish with green onions and sesame seeds.

Notes

Do not add the glaze at the beginning of cooking as the honey will burn. Always sear the chicken first, then add the sauce. Ensure chicken is patted dry before searing for a better crust. Resting the chicken is crucial to retain juices.
