Ingredients
- Boneless, skinless chicken breasts
- Cornstarch
- Salt and pepper
- Vegetable oil
- Fresh garlic, minced
- Fresh ginger, grated
- Honey
- Soy sauce (or tamari for gluten-free)
- Rice vinegar
- Green onions, sliced (for garnish)
- Sesame seeds (optional, for garnish)
Instructions
- Pat chicken breasts dry and pound them to an even thickness of about half an inch. Season lightly with salt and pepper.
- Dredge each chicken breast in cornstarch mixed with a pinch of salt, shaking off any excess to create a light dusting.
- Heat vegetable oil in a large skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden brown, then remove from pan.
- Reduce heat to medium. Add minced garlic and grated ginger to the pan, sautéing for 30 seconds until fragrant.
- Pour in honey, soy sauce, and rice vinegar. Stir to combine, scraping up browned bits from the bottom of the pan.
- Return chicken to the pan and toss to coat in the sauce. Simmer for 2-3 minutes until the sauce thickens into a glossy glaze.
- Remove from heat, garnish with green onions and sesame seeds, slice chicken against the grain, and serve over rice or noodles.

Pound chicken to even thickness for uniform cooking. Do not overcrowd the pan when searing. Slice chicken against the grain for tenderness. Sauce can be thickened with a cornstarch slurry if needed. Leftovers store in the fridge for up to 3 days.
