A refreshing and easy summer snack featuring caramelized watermelon wedges or cubes grilled to perfection with chili powder, lime juice, and optional feta cheese.

- 1 medium seedless watermelon
- 2–3 fresh limes (juiced)
- 1 teaspoon chili powder (or Tajín seasoning)
- Pinch of sea salt
- 1/2 cup crumbled feta cheese (optional)
- Fresh mint leaves for garnish
- Cooking oil (for grates)
Instructions
- Wash the watermelon and slice off the top and bottom to create flat surfaces. Stand it up and slice off the rind, then cut the flesh into 1-inch thick wedges or 1-inch cubes.
- Place the cut watermelon in a large bowl. Squeeze fresh lime juice over the fruit (about 2 tablespoons). Sprinkle with chili powder and a pinch of sea salt. Toss gently to coat without bruising the fruit.
- Let the seasoned watermelon sit for 10 minutes to allow flavors to meld and moisture to draw out.
- Preheat your grill to medium-high heat (around 400°F/200°C). Clean the grates and lightly oil them with a paper towel dipped in oil to prevent sticking.
- Place the watermelon pieces on the grill, ensuring they are not overcrowded. Grill for 2-3 minutes per side until visible grill marks appear and edges turn golden brown.
- If using feta cheese, sprinkle it over the watermelon during the last minute of grilling to allow it to melt slightly.
- Remove the watermelon from the grill and transfer to a serving platter. Garnish with fresh mint leaves and an extra squeeze of lime if desired. Serve immediately while warm.
Notes
Ensure the grill is preheated to medium-high heat to caramelize the sugars without burning the fruit. Cut watermelon into uniform pieces for even cooking. If the watermelon sticks, wait another minute as the sugars will release naturally. Serve immediately for the best texture contrast.
