Description

These juicy grilled pineapple chicken kebabs are a quick, easy, and flavorful summer staple. Tender chicken is marinated in a sweet and tangy sauce, then grilled with fresh pineapple, red onion, and bell peppers for a perfect balance of smoky, sweet, and savory flavors.


Ingredients

  • Boneless, skinless chicken breasts, cut into 1-inch cubes
  • Fresh pineapple, peeled and cut into chunks
  • Red onion, sliced into thick wedges
  • Green bell pepper, cut into squares
  • Extra virgin olive oil
  • Soy sauce (or gluten-free tamari)
  • Freshly squeezed lime juice
  • Fresh minced garlic
  • Fresh grated ginger
  • Honey
  • Salt and black pepper to taste

Instructions

  1. In a medium bowl, whisk together olive oil, soy sauce, lime juice, minced garlic, grated ginger, honey, salt, and black pepper until emulsified.
  2. Place chicken cubes in a large zip-top bag or shallow dish. Pour half of the marinade over the chicken, reserving the other half for basting.
  3. Seal or cover and refrigerate for 30 minutes to 2 hours (do not exceed 4 hours).
  4. While chicken marinates, soak wooden skewers in water for 30 minutes if using.
  5. Preheat grill to medium-high heat (400-450°F / 200-230°C). Brush grill grates with oil.
  6. Thread ingredients onto skewers in a pattern: chicken, pineapple, onion, and pepper. Leave space between pieces.
  7. Place skewers on the grill and cook for 4-5 minutes per side, flipping once.
  8. Baste with reserved marinade during the last minute of cooking.
  9. Cook until chicken reaches an internal temperature of 165°F (74°C) and pineapple has grill marks.
  10. Remove from grill and let rest for a few minutes before serving.

Notes

Do not marinate chicken longer than 4 hours as the acid can break down the meat. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Ensure grill is hot before adding food to prevent sticking. Let chicken rest after grilling to redistribute juices.
