Description

Ingredients

  • 1.5 lbs Sirloin or Ribeye steak, cut into 1-inch cubes
  • 2 tbsp Olive oil or Avocado oil
  • 4 tbsp Unsalted Butter
  • 3 cloves Garlic, fresh minced
  • 1 tsp Dried Parsley
  • 1/2 tsp Dried Oregano
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1/2 tsp Dried Dill
  • 1/4 tsp Red Pepper Flakes
  • 1/2 cup Grated Parmesan Cheese
  • Kosher Salt and Black Pepper, to taste

Instructions

  1. Pat the steak cubes completely dry with paper towels and cut into uniform 1-inch cubes. Season generously with salt and black pepper on all sides.
  2. Place a large skillet or cast-iron pan over medium-high heat. Let it get hot, then add the oil and swirl to coat the bottom.
  3. Add steak cubes to the hot pan in a single layer (cook in batches if necessary). Sear undisturbed for 2-3 minutes to develop a crust, then toss and cook for another 2-3 minutes until browned and cooked to desired doneness. Remove steak from pan and set aside.
  4. Reduce heat to medium-low. Add butter to the same pan and let it melt. Add minced garlic, dried parsley, oregano, garlic powder, onion powder, dill, and red pepper flakes. Stir constantly for about 1 minute until fragrant, being careful not to burn the garlic.
  5. Return the steak bites to the pan. Sprinkle grated parmesan cheese over the steak and toss everything together until the cheese melts and coats the meat in a glossy sauce. Cook for another minute to meld flavors. Serve immediately.

Notes

Ensure steak cubes are dry before searing to prevent steaming. Do not overcrowd the pan to ensure a good crust. Use fresh parmesan rather than pre-grated for better melting. Steak bites cook quickly, so watch them closely to avoid overcooking. Leftovers can be stored in the refrigerator for up to 3 days and reheated gently in a skillet.
