  • 1 lemon, juiced

Instructions

  1. Pat chicken thighs dry with paper towels. Season both sides generously with salt, pepper, smoked paprika, garlic powder, onion powder, and cumin. Rub spices in well.
  2. Wash zucchini and trim ends. Cut into uniform half-moon slices or chunks. Toss in a bowl with a little olive oil, salt, and pepper.
  3. Heat a large skillet or cast-iron pan over medium-high heat. Add 1 tbsp olive oil and let it heat until it shimmers.
  4. Place chicken thighs in the pan skin-side down. Press gently with a spatula. Cook for 5-6 minutes until skin is golden and crispy. Do not move.
  5. Flip chicken and cook the other side for 4-5 minutes until mostly cooked through. If pan is dry, add a splash of water and cover briefly to steam.
  6. Push chicken to one side. Add zucchini to the empty space. Cook for 3-4 minutes, stirring occasionally, until tender but still crisp.
  7. Mix chicken and zucchini together. Squeeze fresh lemon juice over everything and toss to coat. Cook for 1-2 minutes to meld flavors.
  8. Remove from heat. Sprinkle with fresh chopped parsley and serve immediately.
