Description
A quick, utilitarian, and surprisingly delicious weeknight dinner that combines savory ground meat, fluffy rice, and a bold sauce, topped with a fried egg. It’s a comfort food meal that comes together in just 20 minutes using simple pantry staples.
Ingredients
- 1 cup long-grain white rice (uncooked)
- 2 cups water or chicken broth
- 1 lb ground beef or pork (80/20 ratio recommended)
- 3 tablespoons soy sauce
- 1 tablespoon brown sugar
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Worcestershire sauce
- 2 tablespoons water (for sauce)
- 1/2 teaspoon red pepper flakes (optional)
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 2 large eggs
- 2 stalks green onions, sliced
- 1 tablespoon sesame seeds
- 1 teaspoon sesame oil
Instructions
- Rinse 1 cup of long-grain white rice under cold water until clear. Combine with 2 cups of water or broth in a saucepan. Bring to a boil, reduce heat to low, cover, and simmer for 15-18 minutes. Remove from heat and let sit covered for 5 minutes, then fluff with a fork.
- In a small bowl, whisk together 3 tablespoons soy sauce, 1 tablespoon brown sugar, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon Worcestershire sauce, 2 tablespoons water, and red pepper flakes until sugar is dissolved.
- Heat a large skillet over medium-high heat. Add ground beef or pork and break it up with a spatula. Cook until browned and no longer pink. Drain excess grease if necessary.
- Add frozen mixed vegetables to the skillet with the meat. Pour the prepared sauce over everything and stir to coat. Simmer for 2-3 minutes until the sauce thickens slightly and veggies are heated through.
- In the same skillet or a separate small pan, fry two eggs sunny-side up or over-easy until whites are set but yolks are runny.
- To assemble, spoon a generous portion of rice into a bowl. Top with the meat and vegetable mixture. Place the fried egg on top. Drizzle with sesame oil and sprinkle with green onions and sesame seeds. Serve immediately.
Notes
Rinsing the rice is crucial for fluffy grains. Do not lift the lid while rice is simmering. For best results, toast sesame seeds in a dry pan for 30 seconds before sprinkling. Store leftovers in an airtight container for up to 3 days, keeping rice and meat mixture separate to prevent sogginess. Do not freeze the rice or eggs.
