Ingredients

  • 1.5 lbs (680g) boneless, skinless chicken breast or thighs, cut into bite-sized pieces
  • 1 cup (200g) jasmine rice, uncooked
  • 1.5 cups (360ml) chicken broth
  • 1 cup (240ml) thick barbecue sauce
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 tablespoon butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 2 stalks fresh green onions, sliced
  • 1 tablespoon sesame seeds
  • 1 teaspoon sesame oil (optional)
  • 1 tablespoon cooking oil (for searing)

Instructions

  1. Rinse 1 cup of jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice, 1.5 cups of chicken broth, 1 tablespoon of butter, and a pinch of salt.
  2. Bring the rice mixture to a boil over medium-high heat, then reduce heat to low, cover, and simmer for 15-18 minutes until the liquid is absorbed. Fluff with a fork and set aside.
  3. Pat the chicken pieces dry with paper towels. In a bowl, toss the chicken with garlic powder, onion powder, salt, and pepper.
  4. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the seasoned chicken in a single layer and sear for 3-4 minutes per side until golden brown and cooked through. Remove chicken from the pan and set aside.
  5. Reduce heat to medium in the same skillet. Add the barbecue sauce, honey, soy sauce, apple cider vinegar, and red pepper flakes. Whisk together until smooth and bubbly, then simmer for 2 minutes to thicken slightly.
  6. Return the cooked chicken to the skillet with the sauce. Toss to coat evenly and simmer for 2-3 minutes so the chicken absorbs some of the sauce flavors.
  7. Remove from heat. Stir in half of the sliced green onions. Serve the honey BBQ chicken over the fluffy jasmine rice. Garnish with remaining green onions and sesame seeds.

Notes

Do not skip the searing step as it adds flavor. If the sauce is too sweet, add more vinegar; if too tangy, add more honey. For a gluten-free version, ensure your BBQ sauce and soy sauce are certified gluten-free. Leftovers store well in the refrigerator for up to 4 days. Freeze chicken and sauce separately from rice for best texture.
