Description
A simple, balanced homemade steak seasoning blend made with five pantry staples. This versatile rub creates a restaurant-quality crust on steaks and works for grilling, pan-searing, or air frying.

- 1 tablespoon coarse Kosher salt (preferably Diamond Crystal)
- 1 tablespoon coarse black pepper (freshly cracked)
- 2 tablespoons garlic powder
- 1 tablespoon onion powder
- 1 tablespoon brown sugar
- 1 teaspoon smoked paprika
- 0.5 teaspoon cayenne pepper (optional, for heat)
Instructions
- Place a small mixing bowl on a clean, flat surface.
- Add 1 tablespoon of coarse kosher salt and 1 tablespoon of coarse black pepper to the bowl.
- Add 2 tablespoons of garlic powder and 1 tablespoon of onion powder, breaking up any clumps with the back of a spoon.
- Add 1 tablespoon of brown sugar. If lumpy, use a whisk or fork to crush it into the spices.
- Sprinkle in 1 teaspoon of smoked paprika and optional cayenne pepper.
- Whisk everything together vigorously for about one minute until the mixture is uniform in color with no streaks.
- Transfer the blend into an airtight container, seal tightly, and label with the date.
- Store in a cool, dark place for up to six months.
Notes
Pat steaks dry before applying seasoning to ensure a good sear. Apply generously and press spices into the meat. Let steak rest for 30 minutes before cooking to allow salt to penetrate. Cook on medium-high heat to prevent the brown sugar from burning. Toasting spices lightly before mixing can enhance flavor.
