- 4 boneless, skinless chicken breasts
- 1 cup long grain white rice (Jasmine or Basmati)
- 1/2 cup grated Parmesan cheese
- 1 cup Panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 2 cups chicken broth (low-sodium)
- 1/2 cup heavy cream
- 2 tablespoons butter
- 3 cloves garlic, minced
- Salt and black pepper to taste
- 1/2 teaspoon paprika
- 1 tablespoon dried parsley
- Olive oil for searing
Instructions
- Place chicken breasts between plastic wrap and pound to an even 1/2-inch thickness. Season generously with salt and pepper.
- Set up a dredging station with three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of Panko, Parmesan, and dried parsley.
- Dredge each chicken breast in flour, dip in egg, then press firmly into the Parmesan-Panko mixture to coat.
- Heat olive oil in a large skillet or Dutch oven over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown. Remove and set aside.
- In the same pan, melt butter over medium heat. Sauté minced garlic for 30 seconds until fragrant.
- Add rice to the pan and toast for 1-2 minutes. Pour in chicken broth and heavy cream, then add salt, pepper, and paprika. Bring to a simmer.
- Place seared chicken on top of the rice, ensuring it is partially submerged. Cover and reduce heat to low.
- Simmer for 10-12 minutes until rice is tender and chicken reaches an internal temperature of 165°F.
- Remove from heat and let rest covered for 5 minutes. Fluff rice with a fork and serve.
Notes
Pound chicken to ensure even cooking. Do not overcrowd the pan when searing. Avoid stirring the rice too much during simmering to prevent gumminess. For a gluten-free version, use GF flour and breadcrumbs. For dairy-free, use olive oil and coconut milk.
