  • 4 boneless, skinless chicken breasts
  • 1 cup long grain white rice (Jasmine or Basmati)
  • 1/2 cup grated Parmesan cheese
  • 1 cup Panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 2 cups chicken broth (low-sodium)
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • Salt and black pepper to taste
  • 1/2 teaspoon paprika
  • 1 tablespoon dried parsley
  • Olive oil for searing

Instructions

  1. Place chicken breasts between plastic wrap and pound to an even 1/2-inch thickness. Season generously with salt and pepper.
  2. Set up a dredging station with three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of Panko, Parmesan, and dried parsley.
  3. Dredge each chicken breast in flour, dip in egg, then press firmly into the Parmesan-Panko mixture to coat.
  4. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown. Remove and set aside.
  5. In the same pan, melt butter over medium heat. Sauté minced garlic for 30 seconds until fragrant.
  6. Add rice to the pan and toast for 1-2 minutes. Pour in chicken broth and heavy cream, then add salt, pepper, and paprika. Bring to a simmer.
  7. Place seared chicken on top of the rice, ensuring it is partially submerged. Cover and reduce heat to low.
  8. Simmer for 10-12 minutes until rice is tender and chicken reaches an internal temperature of 165°F.
  9. Remove from heat and let rest covered for 5 minutes. Fluff rice with a fork and serve.

Notes

Pound chicken to ensure even cooking. Do not overcrowd the pan when searing. Avoid stirring the rice too much during simmering to prevent gumminess. For a gluten-free version, use GF flour and breadcrumbs. For dairy-free, use olive oil and coconut milk.
