  • 2 tablespoons unsalted butter, softened
  • 6 slices thick-cut bacon (applewood-smoked preferred)
  • 2 medium yellow onions, thinly sliced
  • 4 medium ripe tomatoes, sliced into 1/4-inch rounds
  • 2 cups shredded mozzarella cheese
  • 1 cup sharp cheddar cheese, shredded
  • 1 teaspoon garlic powder
  • Freshly cracked black pepper to taste
  • Pinch of salt
  • Handful of fresh basil leaves, torn

Instructions

  1. Preheat oven to 400°F (200°C). If using a baking sheet, place it in the oven while it preheats.
  2. Cook bacon in a large skillet over medium heat until crispy (6-8 minutes). Remove and drain on paper towels, reserving 1 tablespoon of bacon grease in the pan.
  3. Add sliced onions to the reserved bacon grease. Cook over medium-low heat for 10 minutes, stirring occasionally, until soft and golden brown.
  4. While onions cook, slice tomatoes and pat them dry thoroughly with paper towels to remove excess moisture.
  5. Prepare the crust: Roll out pie dough or arrange biscuits on the baking sheet/pie dish. Brush lightly with melted butter.
  6. Spread caramelized onions evenly over the crust. Layer tomato slices on top, overlapping slightly. Sprinkle crumbled bacon over the tomatoes.
  7. Sprinkle mozzarella and cheddar cheese over the top. Season with garlic powder, black pepper, and a pinch of salt. Scatter torn basil leaves over the cheese.
  8. Bake for 15-20 minutes until cheese is bubbly and golden, and crust is cooked through.
  9. Let cool for 5 minutes before slicing into wedges and serving warm.

Notes

Patting tomatoes dry is crucial to prevent a soggy crust. If using very juicy tomatoes, sprinkle a little flour or cornstarch over the onions before adding tomatoes. For gluten-free, use GF crust or portobello mushroom cap. For dairy-free, use dairy-free cheese alternatives.
