Quick, high-protein wraps made with rotisserie chicken, black beans, and a creamy yogurt sauce. Perfect for busy weeknights and meal prep, these wraps are ready in under 10 minutes and keep you full until dinner.
Ingredients
- 8–10 oz High-Protein Tortillas (e.g., Mission Carb Balance or Wraptitude)
- 2 cups Cooked Chicken Breast, shredded (rotisserie chicken recommended)
- 1 can (15 oz) Black Beans, rinsed and drained
- 1 cup Shredded Cheese (Cheddar or Mexican blend)
- 2 cups Romaine Lettuce or Shredded Cabbage
- 1 ripe Avocado, sliced or mashed
- 1 cup Salsa (medium heat preferred)
- 1 cup Plain Greek Yogurt
- 1 tbsp Lime Juice, fresh squeezed
- 1/2 tsp Cumin
- 1/2 tsp Chili Powder
Instructions
- Shred the rotisserie chicken and place it in a large mixing bowl. Add the rinsed black beans and stir to distribute evenly.
- Sprinkle the shredded cheese over the chicken and bean mixture. Toss gently to coat everything in cheese without crushing the beans. Set aside.
- In a small bowl, whisk together the Greek yogurt, lime juice, cumin, and chili powder until smooth and creamy. Taste and adjust seasoning if needed.
- Warm the tortillas in the microwave for 10-15 seconds with a damp paper towel to make them pliable and less likely to crack.
- Lay a tortilla flat. Spread a generous layer of the yogurt sauce down the center. Top with lettuce or cabbage, then pile on the chicken and bean mixture. Add sliced avocado on top.
- Fold the sides of the tortilla in over the filling. Roll it up tightly from the bottom.
- Place the wrap in the center of plastic wrap or parchment paper. Fold the ends over and roll tightly to secure the ingredients.
- Repeat for remaining tortillas. Serve immediately or store in an airtight container.
Notes
For meal prep, keep salsa and avocado separate until serving to prevent sogginess. If freezing, omit lettuce and avocado; thaw chicken/bean mixture and add fresh greens when ready to eat. Use room temperature ingredients for easier rolling. If cooking chicken from scratch, boil for 10 minutes, rest for 5, then shred.
