- 4 bone-in, thick-cut pork chops (about 1 inch thick)
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 8 oz cremini mushrooms, sliced
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 1 cup low-sodium chicken broth
- 1/2 cup heavy cream
- 1 teaspoon dried thyme
- Salt and black pepper to taste
Instructions
- Pat pork chops dry with paper towels and season both sides generously with salt and black pepper.
- Heat a large skillet (preferably cast-iron) over medium-high heat. Add butter and olive oil.
- Once butter is foaming, sear pork chops for 3-4 minutes on each side until golden brown. Remove chops to a plate.
- In the same pan, sauté mushrooms and onions for 5-7 minutes until browned and moisture has released.
- Add minced garlic and dried thyme; cook for 1 minute until fragrant.
- Sprinkle flour over the mushroom mixture and stir constantly for 1-2 minutes to create a roux.
- Pour in chicken broth, scraping up browned bits from the bottom of the pan. Simmer for 2-3 minutes to thicken.
- Return pork chops to the pan, nesting them into the mixture. Spoon sauce over the chops.
- Reduce heat to medium-low, cover, and simmer for 10-15 minutes until internal temperature reaches 145°F, flipping halfway through.
- Remove chops to the plate. Stir heavy cream into the sauce and simmer for 2-3 minutes until thick and creamy.
- Return chops to the pan to warm through. Serve hot with extra sauce.
Notes
For a lighter version, substitute heavy cream with half-and-half or milk. For gluten-free, use gluten-free flour or cornstarch. Ensure the pan is hot enough to sear the meat properly to avoid steaming. Let pork chops rest for a few minutes after cooking to redistribute juices.
