Hearty Smothered Pork Chops: Easy 1-Pan Mushroom Recipe

  • Author: ava_chapman
  • Total Time: 30 minutes
  • Yield: 4 servings 1x

Description

A comforting one-pan meal featuring tender, seared pork chops simmered in a rich, creamy mushroom and onion gravy. This easy weeknight dinner delivers maximum flavor with minimal cleanup.

Ingredients

Scale
  • 4 bone-in, thick-cut pork chops (about 1 inch thick)
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 8 oz cremini mushrooms, sliced
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 cup low-sodium chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste

Instructions

  1. Pat pork chops dry with paper towels and season both sides generously with salt and black pepper.
  2. Heat a large skillet (preferably cast-iron) over medium-high heat. Add butter and olive oil.
  3. Once butter is foaming, sear pork chops for 3-4 minutes on each side until golden brown. Remove chops to a plate.
  4. In the same pan, sauté mushrooms and onions for 5-7 minutes until browned and moisture has released.
  5. Add minced garlic and dried thyme; cook for 1 minute until fragrant.
  6. Sprinkle flour over the mushroom mixture and stir constantly for 1-2 minutes to create a roux.
  7. Pour in chicken broth, scraping up browned bits from the bottom of the pan. Simmer for 2-3 minutes to thicken.
  8. Return pork chops to the pan, nesting them into the mixture. Spoon sauce over the chops.
  9. Reduce heat to medium-low, cover, and simmer for 10-15 minutes until internal temperature reaches 145°F, flipping halfway through.
  10. Remove chops to the plate. Stir heavy cream into the sauce and simmer for 2-3 minutes until thick and creamy.
  11. Return chops to the pan to warm through. Serve hot with extra sauce.

Notes

For a lighter version, substitute heavy cream with half-and-half or milk. For gluten-free, use gluten-free flour or cornstarch. Ensure the pan is hot enough to sear the meat properly to avoid steaming. Let pork chops rest for a few minutes after cooking to redistribute juices.
