Description
A quick and creamy weeknight dinner that combines the classic flavors of a Philly cheesesteak with elbow macaroni in a rich, homemade cheddar cheese sauce.

- 1 pound elbow macaroni
- 1 pound thinly sliced sirloin steak or ground beef
- 1 medium yellow onion, diced
- 2 green bell peppers, diced
- 3 cloves garlic, minced
- 4 tablespoons unsalted butter
- 4 tablespoons all-purpose flour
- 2 cups whole milk
- 2 cups shredded sharp cheddar cheese
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- Salt and black pepper to taste
- 1 tablespoon oil (for sautéing)
Instructions
- Bring a large pot of salted water to a boil. Add elbow macaroni and cook according to package directions until al dente. Drain and set aside.
- While pasta cooks, heat a large skillet over medium-high heat with oil. Add diced onions and green bell peppers; sauté for 5 minutes until softened.
- Add sliced steak or ground beef to the skillet. Cook until browned and cooked through (4-5 minutes). Remove beef and veggies from the pan and set aside.
- In the same skillet, melt butter over medium heat. Whisk in flour and cook for 1 minute, stirring constantly to create a roux.
- Gradually whisk in milk. Continue whisking until the mixture thickens (3-4 minutes). Do not let it boil over.
- Remove the pan from heat. Stir in shredded cheddar cheese until melted and smooth.
- Return the beef and veggies to the pan. Add the drained pasta, Worcestershire sauce, and Dijon mustard. Season with salt and pepper. Stir to combine.
- Serve immediately while hot.
Notes
Shred your own cheese for the best melt, as pre-shredded cheese contains anti-caking agents. If the sauce is too thick, add a splash of milk or reserved pasta water. This dish does not freeze well due to texture changes in the pasta and cheese.
