Description
A tender, slow-cooked pork loin dish bathed in a sweet and savory pineapple-soy sauce. This easy crockpot recipe requires minimal prep time and delivers restaurant-quality flavor for busy weeknights.

- 2–3 lbs boneless center-cut pork loin roast
- 1 (20 oz) can pineapple chunks in juice (do not drain)
- 1/4 cup soy sauce (or gluten-free tamari)
- 1/4 cup packed brown sugar
- 1 tbsp rice vinegar
- 1 tbsp freshly grated ginger
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- Green onions, sliced (for garnish)
- 1 tbsp cornstarch mixed with 1 tbsp cold water (optional, for thickening)
Instructions
- Rinse and pat dry the pork loin. Cut into 2-inch cubes or leave whole.
- Place the pork in the bottom of a 4-to-6-quart slow cooker.
- In a medium bowl, whisk together the undrained pineapple juice, soy sauce, brown sugar, rice vinegar, ginger, and garlic until the sugar is dissolved.
- Pour the sauce mixture over the pork and toss to coat evenly.
- Add the diced red bell pepper and pineapple chunks on top.
- Cover and cook on LOW for 6-7 hours (or HIGH for 3-4 hours) until the pork is fork-tender.
- Optional: During the last 30 minutes, stir in the cornstarch slurry to thicken the sauce.
- Remove pork from the slow cooker and shred using two forks.
- Return shredded pork to the slow cooker and stir to coat in the sauce.
- Garnish with sliced green onions and serve.
Notes
For best results, cook on LOW to keep the lean pork moist. If using frozen pork, thaw first or add 1-2 hours to cooking time. Shred the meat while warm for easier handling. Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 3 months.
