  • Author: ava_chapman
  • Total Time: 15 minutes
  • Yield: 2 servings 1x

Description

A fast, healthy, and delicious grilled shrimp avocado bowl that comes together in under 15 minutes. Perfect for busy weeknights, this dish features smoky charred shrimp, creamy avocado, and a zesty lime-garlic marinade served over greens or grains.

Ingredients

Scale
  • 1 pound medium or large shrimp, peeled and deveined
  • 2 medium ripe avocados (preferably Haas)
  • 2 tablespoons olive oil
  • Juice of 1 lime
  • 1 clove garlic, minced
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Mixed greens (spinach and arugula) or grains (quinoa or brown rice)
  • 1 red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • Fresh cilantro, chopped
  • Optional: Crumbled feta or cotija cheese

Instructions

  1. Pat the shrimp dry with paper towels to ensure a good sear.
  2. In a medium bowl, whisk together 2 tablespoons olive oil, lime juice, minced garlic, cumin, paprika, salt, and pepper.
  3. Add the shrimp to the marinade, toss to coat evenly, and let sit for 10 minutes.
  4. While shrimp marinates, slice avocados, halve cherry tomatoes, slice red onion, and chop cilantro.
  5. Heat a grill or cast-iron grill pan over medium-high heat and brush with a little oil.
  6. Place shrimp in a single layer on the hot grill and cook for 2-3 minutes per side until pink and opaque.
  7. Remove shrimp from heat and set aside.
  8. Layer greens or grains in bowls.
  9. Top with grilled shrimp, avocado slices, tomatoes, and onions.
  10. Drizzle with extra lime juice if desired, sprinkle with cilantro and cheese, and serve immediately.

Notes

Do not overcrowd the pan to ensure proper charring. Shrimp cook quickly; watch closely to avoid overcooking. Use fresh lime juice for best flavor. Avocados should be sliced just before serving to prevent browning. For a spicy kick, add cayenne pepper or chili flakes to the marinade.
