Description

  • 2 cups fresh pineapple chunks (or canned, drained well)
  • 1 red bell pepper, cut into 1.5-inch squares
  • 1 green bell pepper, cut into 1.5-inch squares
  • 1 red onion, quartered or cut into large chunks
  • 1/4 cup extra virgin olive oil
  • 1/4 cup low-sodium soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon honey
  • 1 teaspoon freshly cracked black pepper
  • 1 tablespoon toasted sesame seeds (optional, for garnish)
  • Fresh cilantro (optional, for garnish)

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. Pat chicken breasts dry and cut into 1.5-inch cubes. Chop bell peppers and onion into similar-sized chunks. Drain pineapple thoroughly.
  3. In a medium bowl, whisk together olive oil, soy sauce, minced garlic, grated ginger, honey, and black pepper until emulsified.
  4. Add chicken cubes to the marinade, tossing to coat. Cover and refrigerate for 30 minutes to 4 hours.
  5. Preheat grill to medium-high heat (400°F-450°F). Clean and oil the grates generously.
  6. Thread ingredients onto skewers in an alternating pattern: chicken, red pepper, pineapple, onion, green pepper. Leave small gaps between pieces.
  7. Grill kabobs for 10-12 minutes, turning every 2-3 minutes, until chicken reaches an internal temperature of 165°F and has nice char marks.
  8. Remove from grill and let rest for 3-5 minutes. Garnish with sesame seeds and cilantro if desired. Serve immediately.

Notes

Ensure ingredients are cut uniformly for even cooking. Do not marinate chicken longer than 4 hours as the acid can break down the meat. Soak wooden skewers to prevent burning. Watch pineapple closely as it can burn quickly due to sugar content.
