Description
A quick and vibrant weeknight dinner featuring juicy grilled chicken breasts topped with melted fresh mozzarella, charred tomatoes, and basil, finished with a balsamic glaze.
Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 8 ounces fresh mozzarella balls (bocconcini) or sliced ball
- 4 large vine-ripened tomatoes, sliced into thick rounds
- 1 generous handful fresh basil leaves
- High-quality extra virgin olive oil
- 2 tablespoons balsamic glaze or reduction
- Kosher salt
- Garlic powder
- Freshly cracked black pepper
Instructions
- Pat chicken breasts dry and pound to an even ½ inch thickness between plastic wrap.
- Season both sides of chicken generously with salt, pepper, and garlic powder.
- Slice tomatoes into thick rounds and tear basil leaves; set aside.
- Preheat grill to medium-high heat (400°F-450°F) and brush grates with olive oil.
- Grill chicken for 5-6 minutes per side until internal temperature reaches 165°F; remove and let rest.
- Grill tomato slices for 2-3 minutes per side until softened and charred; remove and set aside.
- Top grilled chicken with fresh mozzarella and melt using residual heat or brief grill time.
- Assemble dish by placing grilled tomatoes on top of cheesy chicken.
- Drizzle with balsamic glaze and scatter fresh basil over everything. Serve immediately.
Notes
Pounding the chicken ensures even cooking. Do not skip the resting step for the chicken to retain juices. Fresh tomatoes are essential for texture; canned tomatoes are too watery. If using an air fryer, cook chicken at 375°F for 10-12 minutes.
