Description
Soft, chewy cookies packed with semi-sweet chocolate chips, mini marshmallows, and crushed graham crackers. These s’mores-inspired treats come together in under 20 minutes for a quick, indulgent dessert.
Ingredients
Scale
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 1 cup mini marshmallows
- 1/2 cup crushed graham crackers
Instructions
- Preheat oven to 350°F (175°C) and line two large baking sheets with parchment paper.
- In a large bowl, beat softened butter, granulated sugar, and brown sugar together by hand for 2-3 minutes until light and fluffy.
- Add eggs and vanilla extract, mixing until just combined and smooth.
- In a separate medium bowl, whisk together flour, baking soda, and salt, then stir in crushed graham cracker crumbs.
- Gradually add dry ingredients to wet ingredients, mixing until no streaks of flour remain.
- Gently fold in chocolate chips and mini marshmallows.
- Scoop dough balls (about 2 tablespoons each) onto prepared baking sheets, leaving 2 inches between them.
- Bake for 10-12 minutes until edges are golden brown but centers look slightly underdone.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
For best texture, use mini marshmallows to prevent excessive spreading. Do not overbake; centers should look soft as they firm up while cooling. Chilling dough for 15 minutes can help prevent spreading if the kitchen is warm. Store with a slice of bread to maintain softness.
