Description
Crispy, savory roasted broccoli tossed with garlic, olive oil, and parmesan cheese. This quick side dish takes only 20 minutes and uses just five simple ingredients for a crowd-pleeling result.
Ingredients
- 2 large heads of fresh broccoli (about 1 pound), cut into bite-sized florets
- 2 tablespoons extra virgin olive oil
- 3–4 cloves fresh garlic, minced fine
- 1/4 cup freshly grated parmesan cheese
- Kosher salt and black pepper, to taste
Instructions
- Preheat oven to 425°F (220°C).
- Wash broccoli heads and pat them completely dry with paper towels to ensure crispiness.
- Cut florets into bite-sized pieces, discarding tough woody stem parts.
- Mince fresh garlic cloves finely.
- In a large mixing bowl, combine broccoli, olive oil, minced garlic, salt, and pepper. Toss gently until evenly coated.
- Line a large sheet pan (18×13 inch or half-sheet) with parchment paper.
- Spread broccoli in a single layer on the pan, ensuring pieces are not touching to prevent steaming.
- Roast in preheated oven for 10 minutes.
- Remove pan from oven and sprinkle grated parmesan cheese evenly over the broccoli.
- Return to oven and roast for another 5-7 minutes, or until cheese is melted, bubbly, golden brown, and broccoli edges are crispy.
- Serve immediately while hot.
Notes
Do not overcrowd the pan; use two pans if necessary to ensure even roasting and crispiness. Ensure broccoli is bone dry before roasting to avoid steaming. Add parmesan halfway through cooking to prevent burning. For a spicy kick, add red pepper flakes. For a vegan version, substitute parmesan with nutritional yeast or vegan parmesan alternative.
