A quick and flavorful weeknight dinner featuring seared steak bites tossed in a rich garlic butter sauce with pasta. This recipe is designed to be ready in under 20 minutes, making it perfect for busy families.

- 1.5 lbs Sirloin or Ribeye Steak, cut into 1-inch cubes
- 12 oz Penne or Rigatoni pasta
- 6–8 cloves Garlic, minced
- 4 tbsp Unsalted Butter
- 2 tbsp Olive or Avocado Oil
- 1/2 cup Chicken or Beef Broth
- 1/2 cup Parmesan Cheese, freshly grated
- 2 tbsp Fresh Parsley, chopped
- Coarse Sea Salt
- Black Pepper, freshly cracked
Instructions
- Pat the steak dry and cut into 1-inch cubes. Season generously with salt and pepper.
- Bring a large pot of salted water to a rolling boil. Add pasta and cook until al dente. Reserve 1 cup of pasta water before draining.
- Heat a large skillet over medium-high heat. Add 2 tbsp oil and swirl to coat.
- Sear steak bites in a single layer for 1-2 minutes per side until browned but slightly pink. Remove steak and set aside.
- Reduce heat to medium. Add remaining 2 tbsp butter to the pan. Once melted, add garlic and sauté for 30-60 seconds until fragrant.
- Add cooked pasta to the skillet. Pour in broth and a splash of reserved pasta water. Toss vigorously to emulsify the sauce.
- Return steak bites to the pan. Add parmesan cheese and toss until melted and creamy.
- Garnish with fresh parsley and serve immediately.
Notes
Do not overcrowd the pan when searing steak to ensure a good crust. Reserve starchy pasta water to help bind the sauce. If the sauce is too thick, add more pasta water; if too thin, simmer to reduce. For a spicy kick, add red pepper flakes.
