  • 4 tablespoons Unsalted Butter
  • 45 cloves Fresh garlic, minced finely
  • Optional: Fresh thyme sprigs or parsley for garnish

Instructions

  1. Pat the steak cubes completely dry with paper towels and season generously with salt and pepper on all sides.
  2. Heat a large skillet (cast iron or stainless steel) over medium-high heat for about 2 minutes. Add the oil and swirl to coat.
  3. Add steak cubes to the pan in a single layer, ensuring not to overcrowd the pan. Cook undisturbed for 1-2 minutes to develop a crust, then flip. Cook for 3-4 minutes total for medium-rare.
  4. Remove steak from the pan and set aside on a plate, leaving the fond (browned bits) in the pan.
  5. Reduce heat to medium-low. Add butter to the pan. Once melted, add minced garlic and stir constantly for 30-60 seconds until fragrant and golden. Do not let the garlic burn.
  6. Return the steak bites to the pan and toss quickly in the garlic butter sauce to coat. Heat through for about 30 seconds.
  7. Remove from heat, adjust seasoning if needed, and serve immediately, garnished with fresh parsley if desired.

Notes

Ensure the steak is completely dry before cooking to achieve a proper sear. Do not overcrowd the pan, as this will cause the meat to steam rather than sear. Lower the heat before adding butter and garlic to prevent burning. For a dairy-free option, substitute butter with ghee or olive oil.
