  • 2 pounds large shrimp (peeled and deveined)
  • 1/2 cup unsalted butter
  • 2 tablespoons extra virgin olive oil
  • 68 cloves garlic (minced)
  • 1/3 cup dry white wine (such as Pinot Grigio or Sauvignon Blanc)
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup fresh parsley (chopped)
  • Kosher salt and black pepper (to taste)

Instructions

  1. Thaw frozen shrimp if necessary and pat them thoroughly dry with paper towels. Season lightly with salt and pepper.
  2. Place a large skillet over medium-high heat and add the olive oil and butter. Melt until foaming and fragrant, but not brown.
  3. Add the minced garlic (and red pepper flakes if using) to the pan. Sauté for 30-60 seconds until fragrant, being careful not to burn the garlic.
  4. Add the shrimp to the pan in a single layer. Cook undisturbed for about 2 minutes to sear, then flip and cook for another 2-3 minutes until pink and opaque.
  5. Pour in the white wine and lemon juice. Scrape up any browned bits from the bottom of the pan and let the sauce simmer for 1-2 minutes to reduce.
  6. Remove from heat, stir in the fresh parsley, and serve immediately over pasta, rice, or vegetables.

Notes

Ensure shrimp are completely dry before cooking to achieve a good sear rather than steaming. Do not overcrowd the pan; cook in batches if necessary. Shrimp are done when they curl into a loose ‘C’ shape; tight ‘O’ shapes indicate overcooking. White wine can be substituted with chicken broth or extra lemon juice.
