  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon brown sugar
  • 3 cloves garlic, minced (for marinade)
  • 1 teaspoon black pepper
  • 1 tablespoon high smoke point oil (avocado or canola)
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, thinly sliced or minced (for baste)
  • 23 sprigs fresh thyme
  • Pinch of red pepper flakes (optional)

Instructions

  1. Whisk together soy sauce, Worcestershire sauce, brown sugar, minced garlic, and black pepper in a small bowl.
  2. Place flank steak in a zip-top bag or shallow dish, pour marinade over it, and refrigerate for at least 30 minutes (up to 4 hours).
  3. Remove steak from fridge and let sit for 15 minutes to come to room temperature. Pat dry with paper towels.
  4. Heat cast iron skillet over medium-high heat with oil until slightly smoking.
  5. Sear steak in the hot skillet for 3-4 minutes without moving it to form a crust.
  6. Flip steak and cook for another 3-4 minutes until internal temperature reaches 130°F (medium-rare) or 140°F (medium).
  7. Reduce heat to medium. Add butter, sliced garlic, thyme, and red pepper flakes to the pan.
  8. Tilt pan and baste steak with the melted garlic butter for 1-2 minutes.
  9. Remove steak from pan and let rest on a cutting board, tented with foil, for 5-10 minutes.
  10. Slice steak against the grain and serve with pan juices.

Notes

Always slice the steak against the grain to ensure tenderness. Do not overcook flank steak as it is a lean cut; medium-rare to medium is ideal. Let the steak rest before slicing to retain juices. If using salted butter, reduce added salt in the marinade.
