Ingredients
- 1.5 to 2 pounds salmon fillets (skin-on or skinless)
- 1 package (5.2 oz) Boursin Garlic & Fine Herbs cheese
- 2 tablespoons unsalted butter
- 2 cloves fresh garlic, minced
- 1 fresh lemon (half for juicing, half for squeezing)
- 1 tablespoon olive oil or avocado oil
- Fresh parsley, chopped (for garnish)
- Freshly cracked black pepper to taste
- Salt to taste
Instructions
- Pat salmon fillets dry with paper towels and season both sides generously with salt and black pepper. If using skin-on fillets, score the skin lightly.
- Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil until it shimmers.
- Place salmon fillets in the pan, skin-side down. Press gently and cook for 4-5 minutes without moving to form a golden-brown crust.
- Carefully flip the salmon fillets and reduce heat to medium.
- Add butter and minced garlic to the pan. Let butter melt and sizzle for about 30 seconds until fragrant.
- Crumble Boursin cheese into the pan around the salmon. Let it sit for a minute to start melting, then gently baste the salmon with the melting mixture.
- Stir the cheese into the butter and garlic to create a sauce. Add a squeeze of fresh lemon juice. If too thick, add a splash of water or more lemon juice.
- Cook for another 2-4 minutes until salmon flakes easily with a fork and reaches an internal temperature of 145°F.
- Remove salmon from pan and plate. Spoon extra sauce over the top, garnish with fresh parsley and an extra squeeze of lemon juice. Serve immediately.
Notes
Ensure salmon is completely dry before searing to prevent steaming. Do not overcrowd the pan; cook in batches if necessary. Boursin is salty, so taste before adding extra salt. Keep heat at medium when melting cheese to prevent burning. For a dairy-free option, use vegan cream cheese alternatives.
