- 2 Large Eggs (room temperature)
- 1/2 Cup (115g) Vegetable Oil or Melted Butter
- 1/2 Cup (85g) Mini Chocolate Chips
- 1/2 Cup (30g) Rainbow Sprinkles (jimmies)
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large mixing bowl, whisk eggs and vegetable oil together vigorously for about 30 seconds until emulsified.
- Add the entire box of dry cake mix to the wet ingredients and stir until a cohesive dough forms with no dry patches.
- Gently fold in mini chocolate chips and rainbow sprinkles until evenly distributed.
- Scoop dough onto prepared baking sheets, leaving 2 inches of space between cookies. Aim for 12-15 cookies per batch.
- Bake for 9-11 minutes until edges are lightly golden but centers still look slightly soft.
- Let cookies sit on the hot pan for 5 minutes to set, then transfer to a cooling rack to cool completely.
Notes
Do not overbake; cookies continue to cook on the hot pan. For thicker cookies, chill dough for 30 minutes. If dough is too dry, add 1 tsp milk; if too sticky, add 1 tbsp cake mix. Room temperature eggs blend better. Use jimmies sprinkles as they hold shape better than nonpareils.
