Instructions

  1. Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper.
  2. In a large mixing bowl, combine the softened butter and granulated sugar. Mix with a wooden spoon or spatula until the sugar is coated in butter and the mixture looks like wet sand (about 1-2 minutes).
  3. Add vanilla extract if using, and mix to combine.
  4. Pour in the Fruity Pebbles cereal. Gently fold the cereal into the butter-sugar mixture until every piece is coated. Be careful not to crush the flakes.
  5. Use a medium cookie scoop (about 1.5 tablespoons) to drop mounds onto the prepared baking sheets, leaving about 2 inches between each cookie.
  6. Bake for 10-12 minutes, or until the edges are lightly golden and the centers look set but still soft.

Do not overbake as the sugar burns easily. Pull cookies out when they look slightly underdone in the center as they will firm up while cooling.
